Local Seattle chef, Emily Moore, taught us how to make some of our favorite, classic Thanksgiving recipes from entrée to dessert.
Making a Thanksgiving turkey is not as hard as it sounds; the key is to keep it moist. Brush it all over with butter before putting it in the oven and baste with pan juices every 30 minutes while it’s cooking, and you’ll be all set to enjoy a delicious and tender turkey! We also made a homemade brine for the turkey with some of our favorite fall spices. The brine is optional, but it’s a great way to add flavor and moisture to your turkey.
To finish off the roasted turkey, we used pan drippings to create a rich and savory gravy. We love this recipe for it’s simplicity. The drippings of the turkey, white wine (or brandy), and a sprig of thyme come together to make a savory sauce to bring out the flavors of the meat.
To accompany the turkey, we made stuffing with dried cranberries and apricots, a twist on the traditional recipe. The contrast of the sweet and tart dried fruits add a unique flavor to an otherwise savory side dish. This dish is also full of great texture with the sautéed onions and celery adding a fresh crunch.
If turkey's not your style, Chef Emily’s incredible honey baked ham recipe is a must, and it's so easy to make on your own. Fruit nectar, brown sugar, and fall spices make up the sweet glaze that’s drizzled over the ham as it roasts. The sugars caramelize on the surface of the ham creating the best combination of sweet and savory. You'll never buy a store-bought ham again!
No holiday feast is complete without something sweet to round out the meal. Red velvet cupcakes with homemade cream cheese frosting are the best end to a Thanksgiving feast. You’ll definitely want to make extra frosting, it’s hard to resist eating it by the spoonful!
