Cooking the kimchi mellows out its pungency but enhances fried rice with its spicy complex flavour! Served with a glorious fried egg on top 🍳👍🏼

Simple Kimchi Fried Rice

Finely chop the scallion greens and set aside. Next chop the kimchi into small pieces.

In a wok or heavy bottom pan over medium to medium-high heat, add the oil and saute the chopped kimchi for a minute to caramelize it.
