Gougères are as easy to make (requires only a handful of staple ingredients) as they are hard to resist!

Step 1

Preheat oven to 375f /190c. In medium-sized heavy saucepan, put in butter along with 1C /250 ml water and the salt and pepper. Bring to a boil and pull from heat.

Off heat, dump in the flour *all* at once! Beat the mixture with a wooden spoon.

Beat until the mixture pulls away from the sides of the pan and forms a ball.

Back on low heat, continue to beat for a minute or so to dry out the paste a little bit. Remove from heat and cool for 2-3 minutes.

Add the eggs, one at a time. Beat it vigorously with a wooden spoon after each addition. This is my favourite part! 😄 At first it may seem like the eggs are not mixing in, that's normal, keep going and you shall see it come together.
