Christmas simply isn't Christmas without these mince pies. They are filled with delicious homemade vegetarian mincemeat and is a Christmas classic.

Then, top with a heaping teaspoon of mincemeat in each of the pastry cup. The mincemeat can be store bought or homemade.

Using the leftover scraps of pastry, reroll into thin layer.
