Stuffed peppers reminiscent of tapas but given an Asian edge. They are just hot enough that I like to eat them more like a Chinese dish with rice.

Stuffed Jalapeño Peppers

Ingredients

Step 1

Combine all ingredients except peppers into a bowl and mix well.

Slice the tops off the jalapeños, then cut each in half lengthwise. Remove pink core areas and seeds. Use sweet mini peppers if you don't like spicy.

Slightly overstuff the peppers, forming a contoured mound over each one.

Heat oil on medium heat until oil barely starts to smoke. Cook peppers, meat side down, to brown for 2 mins. Flip over (pepper side down) and cover.
