Step 1

Gather all your ingredients for the cookies and have mise en place ready. Preheat oven to 350 F.

Mix ground flaxseed and almond milk together. Set aside.

Sift all-purpose flour, cocoa powder, baking soda, and salt together.

Combine canola oil and cane sugar in mixing bowl and beat until combined.

Add almond extract and flax mixture to bowl. Mix.

Add dry ingredients to wet mixture. Mix until well combined and divide dough into two equal portions.

Press one portion of dough into a thin, even layer in the shape of the baking dish (8" x 8"). Bake 350 degrees for 15 min. Cool cookie on rack.

Repeat step 7 with second portion of dough. It can cool in the baking dish instead of a rack, since it will be the base for building the ice cream sandwich.
