Inspired by the heirloom squash and purple-skinned potatoes from the farmer's market... Adding bacon, thyme, and an egg made this a breakfast treat!

Bacon, Squash, and Potato Hash

Instructions

Step 1

Wash squash and potatoes. Fill a pot with 6 cups of water and 1 tbsp of a salt and start to bring to a boil while you cut the potatoes.

Dice potatoes into small 1 cm cubes and put into the pot of water once the water is at a rolling boil. Set timer for 5 minutes (and go to next step).

Once the potatoes have been cooking for 5 minutes, fish them out with a slotted spoon. Now put the squash into the water and boil for 2 minutes.

Remove squash from water. Prepare bacon by cutting across each slice to make 1 cm strips. Start heating a large cast iron pan.

Cook bacon until browned and some of the fat is rendered. Add onions, garlic, white & black pepper. Cook for about 30 seconds while stirring.
