I got some of the hottest peppers in the world, so I wanted to make salsa with it. I normally use jalapeños, but this one has the Trinidad Scorpion!

Step 1

Heat up the pan and add a little bit of oil. When hot, add the tomatoes and let them blister so the skin peels off easily. Can also roast in the oven.

Remove the tomatoes from the pan & use a fork to remove the blistered skin. Then place in the blender & quickly blend it to your desired consistency.

Step 4

Chop the onion. I only used half, but for those who like lots of onions, the whole thing would have been fine.

And now for the pepper! These rank #2, #3, #4 on the Scoville Heat Units. I chose the #2 hottest which is the red one -- the Trinidad Scorpion.

Step 7

I've heard of how hot this pepper is, so I started with half. Be sure to protect your fingers when handling the peppers. If no gloves, use a plastic bag.

There it is! It ended up not being hot enough for me so I went back & added the other half of the Trinidad Scorpion. Chill & serve however you like.
