Omelettes are fun and easy to make. The best part is you can use whatever ingredients you like, or in my case usually, whatever I have in my fridge.

Step 1

Gather all your ingredients. Each step cooks fast, so you'll want to have everything readily available. It's all about the mise en place!

Step 2

Add a little bit of oil to the pan and make sure it's hot. Start with the vegetables that take the longest to cook first. Jalapeño and onion here.

Step 3

And then add the tomatoes and baby spinach leaves. Mushrooms would be good too, but I didn't have any. Basically, use whatever ingredients you fancy!

Once the cheese starts to melt a little bit, fold the omelette in half. The cheese will continue to melt. And that's my rustic homemade omelette!
