Step 1

Wash the turkey inside and out and dry thoroughly with paper towels. Remove the giblets and gizzards. Note: Remember to fully thaw turkey in your refrigerator before beginning (approx 24 hours for every 4-5 lbs).

Assemble ingredients for brining.

Bring 1 ½ gallons of water to a boil in a 4 gallon pot. Add all the ingredients pictured in step 2 while the water is coming to a boil and stir to dissolve the salt and sugar. Turn the heat down and let the brine simmer for 5 min.

Stir the ice water into the pot to bring the mixture down to room temperature. Carefully lower the turkey in to the brine, letting the cavity fill with liquid.

Immerse the turkey completely, cover the top tightly with plastic wrap and put into the refrigerator for 8-12 hours for a 12 lb or less turkey. (9-14 hours for a 12-14 lb turkey, and 15-20 hours for a 20 lbs or more turkey). Turn the turkey over once during brining.
