Step 2

Heat skillet over medium heat and add oil. Add mushrooms and sauté until they start to release liquid. The amount of liquid will depend on which type of mushroom you choose.

Step 3

Add garlic, soy sauce, and green onions. Continue sautéing until most of the liquid has evaporated.

Step 4

Add rice vinegar and sesame oil. Turn off the heat and allow mushrooms to cool to room temperature.

Step 5

This is a good time to make the Tangy Peanut Dipping Sauce. Combine all the sauce ingredients and mix well.

Step 6

To assemble the rolls, have all mise en place ready: trim lettuce leaves, cut cucumber and carrots into thin 4-inch long pieces, and pick the herbs.

Step 7

Prepare a shallow dish with enough warm water to soak rice paper wrappers. Place each wrapper in water for about 10 seconds so it hydrates.

Step 8

Remove rice paper from water and lay onto your work surface to start assembling. Place lettuce in middle of wrapper. Scoop a spoonful of mushrooms and place along the center of the wrapper. Add carrots, cucumbers, and sprinkle herbs.

Step 9

Fold the bottom third of the wrapper up over the filling. While holding it firmly in place, fold the sides towards the center. Continue by rolling the roll up tightly towards the top until it looks like the shape of a cigar.

Step 10

Repeat steps 8-9 with the rest of the wrappers until the filling is used up.

Step 11

If desired, cut each roll in half diagonally (or serve whole). Serve with Tangy Peanut Dipping Sauce and enjoy!
