Cut short rib into segments and soak in water 15 minutes to cleanse blood (optional step). Change water, adding enough water to cover, about 5 cups.

Smash 3 cloves of garlic. Cut 2 slices of ginger. Halve an onion and remove outer skin. Pare skin off daikon, cut into segments and halve lengthwise.
