Step 1

Preheat the oven to 425F and gather all of your ingredients together! I'm using an 8" baking dish and 3 sweet potatoes happened to fit nicely. Also went with just thyme instead of +rosemary.

Melt the stick of butter and pick off some fresh thyme to add to it.

Peel and thinly slice your sweet potatoes and shallots.
