A play on traditional Thai mango and sticky rice dessert. Perfect for the summer heat. Super simple and quick to make in advance too!

Wash and Soak black sticky rice in water overnight. Drain the next day

In a small pot, mix 1cup coconut milk with brown sugar, pinch of salt. Add drained rice and then add water until 1cm above leveled out rice ~1/2cup

Bring to boil and then simmer low-med with lid on for about 30-35mins. Taste to see if chewy. Fluff, let cool and stick in fridge to get it cold
