Prepare all the ingredients by washing, chopping and slicing.

Heat a skillet and add oil or butter. Drop cubed pancetta, sauté for a few seconds, then add sliced mushrooms, sauté for minute or so, then add green onions, thyme, pinch of salt and chili flakes. Let it all cook on medium heat for about 10 minutes.
