It's an all-American breakfast in muffin form! A fluffy pancake muffin stuffed with a soft boiled egg topped with maple yogurt frosting and bacon!

The All-American Breakfast Muffin

Step 1

Soft boil 5 eggs. My trick is to put it in tap water and wait for it to boil. From start of boiling, wait 3 mins and then quickly put into ice water

Place in fridge overnight. Perl carefully and dry on towels

Preheat oven to 350F. Mix dry ingredients together. Flour, salt, baking soda and powder, sugar

Mix wet ingredients (butter, syrup, buttermilk, eggs, vanilla) in a bowl and then add to dry stuff. Mix well. Dry eggs on towel and roll in some flour

use a popover pan! A lot easier than my DIY pan lol. Add some pancake batter and then an egg in the middle. Top off with more batter to cover egg

Bake muffins for 20-30 mins. Meanwhile, cook bacon until crispy. Let cool and chop into small pieces
