Preheat oven to 425 deg F. Slice the acorn squash length-wise, making sure each slice is of equal thickness (about 1/2 inch thick). Roast for 15 min

Heat miso, honey, mirin + cooking wine on med low heat in a saucepan, stirring w/a whisk. Heat until miso dissolves. Remove from stove + swirl in oil.

Let squash cool. Then sautée shallots + garlic over med heat. Add in the mushrooms and a dash of mirin. Cook until mushrooms are lightly browned.
