Separate egg yolks from the eggs. To do that, gently hold an unshelled egg in one hand, then let the egg white drip out.

Add sugar, then whisk for 3-5 min. The goal is to add air into the mixture and dissolve the sugar.
The final mixture should be both thicker and lighter in color. When it drips, it should leave a trail for a short second. This is called the ribbon stage.
Combine milk, cloves and cinnamon in a pot. Cook over low heat until boiling.
Pour egg mixture into the pot. Cook over medium heat for 3 min, stirring occasionally. DO NOT let the mixture boil or your egg yolks will become solid.
Strain the mixture to remove cloves. Let it cool for one hour.
Mix in light cream, rum, vanilla extract and nutmeg. Refrigerate for at least two hours (or overnight) before serving.
