Who would've thought beans and squash would make such a tasty lasagna?? The authors of "Spilling the Beans" did and this was our first shot at it too!

Roasted Squash Lasagna (From "Spilling the Beans")

Ingredients

Instructions

Step 1

Pre heat oven to 450 F. Peel and cut squash into half inch chunks.

Toss squash with olive oil, garlic clove, salt and pepper then roast for about 25 minutes until squash is tender.

Sautée onions, mushrooms, and rosemary with butter until liquid has evaporated and mushrooms are golden.

Sprinkle flour on mixture and slowly add milk while stirring continuously. Season with salt and pepper. Mine could've used some garlic here too.

Let sauce come to a boil then simmer for ten minutes until thickened. Add in the Parmesan and the beans. Taste again and season appropriately.

Layer a spoon of sauce into the bottom of a casserole dish. Follow up with 3 noodles, half the squash, a third of the sauce, and continue in this orde

Cover with foil and bake for 30 minutes at 425 F. Grate the cheese while waiting.
