Prep your ingredients. Cut the bigger cauliflower pieces in half, all florets should be about the same size so they cook evenly.

Toss cauliflower, onions & 5 sprigs of thyme with salt & extra virgin olive oil. Cover & roast in a 375 degree oven for ~40mins, tossing every 10 mins

Bring 2 1/4c water to a boil, then reduce the heat to medium and add the farro and salt. Cover and simmer for about 10-12 minutes or until cooked.

Meanwhile, make the yogurt sauce with non-fat plain greek yogurt, salt, black pepper, 1 tbsp cold water, & chopped thyme leaves from 1 sprig of thyme.
