Use previously baked potatoes. To bake potatoes if needed: wash/scrub 3-4 potatoes, poke 8-12 holes with fork, bake in 350* for 1 1/2hrs, cool and refrigerate 2hrs or overnight.

Shred potatoes with cheese grater. There is no need to peel as potato skins will separate as you grate. This is much easier than grating uncooked potatoes, and only takes a few seconds each. Keep potato skins to cook separately if you would like.

Heat olive oil in large skillet. Use enough oil to cover the bottom of your pan. The oil will make the hash browns nice and crispy so make sure to put enough.
