Ever since going Wheatbelly, i've been experimenting with different options for breakfast or lunch. One of my favorites is these muffins.

Instructions

Step 1

Place the eggs in a large bowl

Add 200 grams of Hazelnutmeal and 50 grams of Almond meal. You can also experiment with another combo, but keep it total to 250 grams!

Add Vanilla Extract to taste, I use about 2 drops per muffin

Add Baking soda, but put it to one side, opposite of where the lemon juice will be placed, see next step

Add Lemon Juice on the opposite of the Baking Soda, this way the sour of the Lemon Juice will not activate the Baking Soda just yet

Preheat your oven! 190 degrees, baking time 20 minutes

Mix everything well. The baking soda and Lemon Juice will be in contact and will be activated, this will give your muffins a bit of fluffyness

Divide the mixture among the six muffin-holders

Place the Muffin-tray in the center of your oven, when pre-heating is done

After 20min. Muffins should come out looking like this. Leave them in the tray for about 5min.
