Heat pan to med-high heat w/oil; add all the spices & bloom them for flavor. Within next 20 sec, add tomatoes, reduce heat to simmer and cook for 1hr.

To make the yogurt sauce, add the same spices to yogurt + a pinch of raw sugar and some chopped chives, and give it a good mix.

Heat another pan on med, add splash of oil, then mergaze sausage. Brown & cook all the way. You want to get a good caramelization & color w/o burning.

Butter bottom of casserole dish. Crack in an egg, add pinch of salt, bit of sausage, and some tomato sauce. Top with cut cherry tomatoes and chives.
