My husband and I love eating this for breakfast! It's filling, warm and flavorful. Often times we're hungry before lunch time, but not this morning!

Potato and Edamame Skillet

Instructions

Heat olive oil on medium, chop your potatoes, red bell pepper, onion and add to skillet along with edamame. Toss and stir occasionally.

While skillet is cooking, prepare the bacon your desired way - I just popped mine into the microwave - and reserve the fat.
