Earl grey ice cream makes for a velvety, sweet treat. There is a familiar (not too strong) herbal character to it that keeps every bite interesting.

Step 1

Heat cream and milk to just under boiling. Add sugar and sea salt. Stir to dissolve. Add tea (cut loose if in using teabags--Mighty Leaf works well).

Let cool briefly before putting mixture into a container to steep overnight in the refrigerator. Leave the tea leaves in.

The next day, use a fine mesh strainer to strain out the tea leaves. Then heat to just below boiling again and then turn heat to lowest setting.

Whisk egg yolks and then slowly add to the milk, stirring continually to make a smooth custard (prevent egg from scrambling). Turn off heat and stir.
