The nicely browned crust at the bottom of these dumplings is the key to these potstickers (Guo Tieh). Here's a simple recipe from my family.

Step 1

Finely chop all of the vegetables and aromatics. Scallions, onions, ginger, cilantro, garlic, napa cabbage, spinach and/or bok choy.

Pour 1/2 cup of water evenly around pan and cover. Let steam for 4 minutes. Uncover, and repeat by pouring 1/2 cup water, cover for 4 more mins.
