Aloo Poha (Potato and Flat Rice)

Ingredients

Instructions

Step 1

Cut tomato and onion fine. Cut potatoes into small cubes (aprx. 3/4th inch). Slit Serrano pepper

In a pan, heat oil and add mustard seeds. Let the seeds crackle for about 15-20 seconds

Add onions and slit Serrano pepper to the pan. Sauté it till the onions are lightly browned

Add about 1 tablespoon of tomato to the mix and sauté it for 30 seconds. Do not mash the tomatoes while sautéing the mix

Add chilli powder, turmeric powder and salt to the tomato and onion in the pan. Mix this well

Add potatoes to the spice mix and stir it well

Add water, enough so the potatoes are covered by it. Putting too much however will dilute the spice so be cautious. Cover and cook

Add poha (flat rice) in a strainer and wash it lightly to soften it. If the poha is thicker, it may need to be soaked for 5 mins prior.

Add washed poha to the potatoes. Make sure there is still a little water in the pan. Stir constantly to mix well. Too much water will make it mushy

Before removing it from the pan, add lime juice and stir. (Optional: garnish with cilantro)
