Shout out to my Mother-in-law! She taught me this dish and it's one of my favorites! It's flavorful, colorful and only as spicy as you want it.

Step 1

Toss the chicken and yogurt in a small bowl. Allow it to marinate for 30 minutes. However, you may begin cooking everything else while it's sitting.

Prepare the ingredients! Peel the potatoes, grate the ginger root and garlic (or chop till fine), dice the tomato and the onion.

Heat 3 tablespoons of vegetable oil on medium high and add the potatoes once they're cut in quarters.

As you brown the potatoes over medium high heat, you may need to use the skillet lid as a shield! Place the potatoes in a separate bowl till later.
