A healthy and colorful salad where you can taste the flavor of each ingredient because the homemade vinaigrette is so light. Can add any vegetables!

Rainbow Quinoa & Kale Salad

Add 1cup of quinoa to pot. Then add 2 cups water. It's a 1:2 ratio so adjust accordingly to your servings. Cook on stovetop on high heat until boiled.

Wash the kale and remove excess water. Cut off the hard stems if you prefer.

Chop the kale to your desired size. Since kale tends to be very hearty and fibrous, I like it on the smaller side. Add to big bowl when done.

For the dressing, I'm using a recycled glass jar with a lid. Just add the oil, lemon juice, and salt & pepper to taste. Put on lid and shake away!

I LOVE garlic in almost everything because it's full of flavor & packed with health benefits. I used 4 cloves here, but 1 is probably enough for most.

Add chopped garlic to the jar & shake it again. This is more dressing than you need. Store leftover in fridge & let sit in room temp before serving.
