Cooking fish can be tricky but this is totally foolproof and works for basically any combination of fish and veg. Toss in some fresh herbs too!

Step 1

Preheat oven to 450 degrees. Julienne (thinly slice) vegetables -- you can really use any veggies you want here but aromatic ones work best.

Fold two large sheets of parchment paper in half and draw half a heart then cut out (easy technique from Cooking Light). Wash and pat dry fillets.

Put the fillet on one side of the heart. Salt and pepper. Top with veg. Drizzle oil and butter over then top with slices of lemon.

Starting at the top of the heart fold edges over as if you were making an empanada. At the bottom, twist close.
