Step 1

Heat oven to 350 degrees. Combine sugar, GF flour, cocoa, baking powder and soda, salt in large mixing bowl.

In another bowl add eggs, milk ( or canned coconut milk for dairy free which is what I used), oil, and vanilla. Beat until smooth.

Combine wet and dry ingredients. Mix in coffee last. Batter will be lumpy. Evenly distribute cakes between two 8 inch round greased pans.

Cook for 30 mins. Poke toothpick in the center- if it comes out clean, cakes are done. Cool in pans for 10 mins and let finish cooking on racks

Use store bough vanilla frosting or whisk 1/2 c melted butter, 3 c powder sugar, 1 teaspoon vanilla and pinch of salt to make frosting. Ice cakes
