Udon Noodle Soup

Step 1

Cut the florets of the broccoli crown and wash broccoli thoroughly.

Soak the dehydrated mushrooms until they're rehydrated and soft enough to cut. If you're in a hurry, you can soak these in boiling hot water for about 5-8 mins before they're ready to slice, but the trade off is losing some of that delicious flavour.

In a medium sized pot, mix the soup base and 5 cups of water to boil and then turn the heat down to medium. (This ratio is a bit diluted because the bottle's recommendation is pretty salty!) While you're waiting for the soup to boil, slice the mushrooms, discarding the stumps.

Chop the stalk of green onion to desired size.

Put the packages of frozen udon noodles into the broth and cook for 2 mins, or until noodles are at desired texture. (The packages we used were precooked and frozen, so they cooked really quickly!)

Once noodles have been cooked, pull them out of the boiling broth and portion out into bowls for serving.
