A few years ago, I bought bagels every week to have for breakfasts. Now I make my own!

Put flours, yeast, 1T sugar and salt into large mixing bowl. Remember: yeast likes sugar but doesn't like salt so try to keep the yeast and salt apart
Add 300ml warm water and mix and knead with dough hook or by hand for 8-10 minutes until soft and elastic. (Add more water or flour as needed)
When dough is soft and a fingerprint springs back, cover with plastic wrap and leave to prove in a warm place for about 1 hour or until double in size
Once the dough has risen, you can add extra flavours (cheese, seeds, nuts, fruit, spices, etc.). If using, knead them in now and prove again for 30min
When dough is finished proving, put 5cm of water in a pan to boil and preheat the oven to 200C.
Tip the dough out of the bowl, punch out air, and divide into 6 balls. Make into bagel shape by poking your finger through the ball and twirl.
Add 2T of sugar to boiling water and stir to dissolve. Boil bagels 2 or 3 at a time for about 2 minutes, turning once.
Remove bagels from water with a slotted spoon and place on baking tray. Bake in centre of oven for 30min
The bagels are done when they are golden brown on top, and sound hollow when you tap the base.
