Preheat oven to 200°C / 390°F. Slice the onions into rings or half rings.
Heat the oil in a frying pan, add the onions and cook for 3-5 minutes. Add in the sugar and balsamic vinegar and cook for 3-5 minutes more until soft.
Roll out the puff pastry. Score the pastry about 1 cm from the edges to create a border (don’t cut it through). Prick the base of the tart with a fork
Cut the figs into slices. Arrange the caramelized onions evenly over the pastry. Distribute figs, sprinkle thyme and crumbled blue cheese all over.
Bake for 20-25 minutes until golden and puffy. Allow to cool a bit.
Sprinkle with fresh arugula. Slice and serve. Bon appetit!
