Polenta fries make an excellent side dish or snack. I had mine for breakfast with scrambelled eggs. Easy breakfast for thanksgiving day!

Cook polenta following package directions. Usually 1 cup to 4 cups liquid. Pour into shallow baking pan and let set in fridge for at least 1 hour.

Cut polenta into fries. Prepare flour, egg and bread crumbs. Bread fries in small batches for frying.
