Southwestern Quinoa Salad

Cook quinoa in rice cooker. If using a pot, bring to boil then turn down to simmer for 15min. Meanwhile, drain canned beans and pour into large bowl.

Drain and add corn to bowl.

Dice & add tomatoes. Here, I'm using roma since they're easy to dice & not too watery, but realized they weren't very sweet. If possible, use heirloom

Dice half a sweet onion and add to bowl.

Dice and add avocado. Then juice a lemon over it.

By now, your quinoa should be done (approx 20min in rice cooker, 15min in pot). Fluff with rice paddle or fork and let it cool down.
