The combination of ground beef and pork make these meatballs incredibly flavorful, and the chopped mint adds a nice bit of freshness!

Preheat oven to 375F. Make a "panade" by mixing the diced bread & milk together. Cover & refrigerate overnight. If time constrained, break up w/hands.
Sauté the diced onion and crushed garlic in olive oil over medium heat until translucent, about 4 minutes.
In a mixer with the paddle attachment, mix the panade with the onions and garlic until the bread is thoroughly broken apart.
Add egg yolks, 2oz parmesan, paprika and herbs. Mix to combine.
Add the ground beef and ground pork and mix on medium speed until everything sticks together, about 2 minutes.
Scoop out 2 ounce meatballs, using an ice-cream scoop if you have one.
Form meatballs with your hands.
Preheat sauté pan with canola oil and sear meatballs on all sides until golden-brown, about 2 minutes per side.
Bake meatballs in a 375F oven until done and interior temperature reaches 160F (14-18 minutes)
While the meatballs are in the oven, warm the tomato sauce and cook the pasta.
Toss the meatballs, sauce, and pasta together and serve with parsley and parmesan.
